Sustainable restaurants, sustainable culinary systems, and circular markets
The seminar will focus on the relationship between a sustainable culinary system cantered on restaurants and other food service providers and the concept of a circular economy.
Sarah Naderi will highlight how restaurants are connected to number of different circular markets, e.g., food and plastic/paper packaging, which may have implications for not only the circularity of other markets but also the actual sustainability of culinary systems and the capacity of individual restaurants to be more sustainable. Using various examples, the presentation will emphasize that while aspects like local food networks and farmers' markets are significant, it's also essential to address institutional factors and engage suitable actor networks to successfully 'close the loop' within a culinary system.

Short Bio
Sarah Naderi is a doctoral candidate in the Department of Management, Marketing and Tourism in the Business School at the University of Canterbury, New Zealand. She was formerly a graduate student and research assistant in the Tourism Faculty at Eastern Mediterranean University. Her research interests include sustainable restaurant management; sustainable tourism; green and environmentally issues in hotels; waste management in tourism and hospitality; and local foods.
